30 Minute Toffee Doodle Cookies

Ingredients
unsalted butter
granulated sugar
vanilla extract
egg
all-purpose flour
cream of tartar
baking soda
salt
toffee bits
cinnamon

Line two baking sheets with parchment paper and set aside.
Cream the butter and sugar in bowl of a mixer until light and fluffy.

Add the vanilla extract and egg, mix to combine.

In another bowl mix together the flour, cream of tartar, baking soda, and salt.

Slowly add the flour mixture to the butter mixture until combined.

Reduce the speed to low and add toffee bits until just combined.

In a small bowl combine the cinnamon and sugar. Portion cookies, and roll into balls. Coat each cookie dough ball in the cinnamon sugar mixture.

Place on the prepared sheets about 2 inches apart. Bake each batch.

Let cool on the pan for 2 minutes, then transfer to a wire rack to cool completely.
