Preheat the oven to 425 degrees F. and spray a 9x9 baking dish with nonstick spray.
In a large bowl, combine hash browns with 3 tablespoons of melted butter, salt, and pepper, blending well.
Add in the soup and sour cream, then the cheddar cheese, mixing everything well.
Spread the mixture evenly into the prepared baking dish. Optional – top with crushed potato chips or French’s Fried Onions.
Bake uncovered for 25 minutes.
Notes
You can add crushed potato chips or French's Fried Onions to the top before baking. Mix 2 tablespoons of melted butter and 3/4 cup crushed potato chips or French’s Fried Onions and sprinkle over top of casserole.
You can also add diced onions during step 3 if desired.
Store leftover casserole in an airtight container in the fridge for up to 4-5 days.
