Monterey Jack Chicken Casserole is quick and easy to make with only 5 ingredients, 8 steps, and one pan. The combination of tangy BBQ sauce, tender pieces of chicken, smokey bacon, and rich Monterey Jack cheese makes this a meal the whole family will love!
Cover the chicken in plastic wrap, pound the chicken flat with a meat mallet, and place it in the bottom of a 2-quart casserole dish.
Spread 2 tablespoons of BBQ sauce on each chicken piece.
Layer the roasted red peppers over the BBQ sauce.
Cut the bacon into slices equal to the size of the chicken breast and lay it over the top of the casserole.
Bake uncovered for 25 minutes.
Remove from oven and sprinkle cheese over the top, then turn oven to 350˚F and cook for 5 additional minutes, or until chicken is cooked through (165˚F internal temp).
For garnish, sprinkle green onions over the top, if desired. Serve warm using a slotted spoon. There will be extra liquid left in the pan. Enjoy!

Store leftover Monterey Chicken in an airtight container in the fridge for 4-5 days.
