Instructions
For the breadsticks:
Place parchment paper on two large baking sheets.
Add the barely warm water, yeast, sugar, 3 tablespoons melted butter, and salt to the bowl of a stand mixer and stir together briefly.
Stir in 2 cups of bread flour into the yeast mixture and blend on low speed until well combined using the paddle attachment.
Switch to the dough hook attachment. Add 1 more cup of flour and let it knead for about 5 – 7 minutes.
Add some oil to the bowl, flipping the dough over once, to coat it.
Cover the bowl with a warm damp towel and set aside in a draft-free warm place to rise until doubled in size, about 1 hour.
Punch down the dough and transfer to a lightly floured surface. Divide dough by cutting it in half, then in half again.
Cut the 4 pieces into thirds to make 12 equal pieces.
Using your hands, roll each piece of dough into 6 or 7-inch long sticks and place them on the prepared baking pans.
For the second rise, cover them with warm damp kitchen tea towels (or plastic wrap) and allow them to rise for about 30 – 45 minutes.
Preheat the oven to 400 degrees F.
Bake the breadsticks on the center rack for about 15 minutes. Move the pan to the top rack for the last few minutes to get a golden brown crust.
Optional – For the topping:
In a small bowl, stir together 2 tablespoons of melted butter, garlic powder, coarse salt, and oregano.
Using a pastry brush, spread the garlic butter on the warm baked bread sticks and serve warm.
Notes
Store leftovers at room temperature in an airtight container in a cool, dry place for up to 3 days.
Make this breadstick dough vegan by using vegan butter instead of regular butter.
You can use all-purpose flour instead of bread flour.
Perfect topping additions include Parmesan cheese and Italian seasoning. Sprinkle them on just before baking.
