Instructions
On a cutting board, dice the Spam, green pepper, and onions.
Add the butter to a non-stick frying pan over medium.
Once the butter is melted, add the diced green peppers and cook for 4 minutes, stirring occasionally.
Add the diced onions and diced spam to the same pan and continue cooking for another 6 minutes, stirring occasionally.
Whisk together the eggs and milk in a small bowl. Pour them into the same frying pan and let everything cook for about 30-60 seconds without stirring.
Cook, and stir occasionally, until the eggs are thickened and no visible liquid egg remains, but the eggs are not dry. Add salt and pepper to taste.
Notes
You can use turkey spam instead of the original spam.
Try adding some cheddar cheese right before serving.
To make great breakfast burritos, try serving these spam eggs wrapped in a flour tortilla.
This recipe could also easily be made as a spam omelet.
