How to make Banana Oat Bars
Step 1 - Preheat the oven to 350 degrees F.
Step 2 - Mash the bananas in a large bowl using the back of a fork or use a stand mixer. Try to get it as smooth as possible.
Step 3 - Stir in peanut butter, brown sugar, and vanilla extract until combined.
Step 4 - Add the quick oats, cinnamon, baking powder, and any optional add-ins. Stir to combine.
Step 5 - Spray an 8x8 inch square baking pan with non-stick spray and pour the oatmeal batter into the prepared pan.
Step 6 - Bake for 20-22 minutes on the center rack of the preheated oven. Remove, cool completely, and cut into 9, 12, or 16 bars.
Pro Tips
Transfer to an airtight container and keep in the refrigerator for up to 5 days. Or freeze for up to 3 months.

- ½ cup creamy peanut butter
- ½ cup brown sugar
- 1 teaspoon pure vanilla extract
- 1-¾ cups instant oats
- 1 teaspoon cinnamon
- ½ teaspoon baking powder
- Optional add-ins: ½ cup chocolate chips, fruit, or sweetened shredded coconut
