Substitutions
You can use a different cake mix such as yellow cake mix, white cake mix, or chocolate cake mix. Because those cake mixes do not have spices, add a teaspoon or 2 of pumpkin pie spice to the batter.

How to make 3 Ingredient Pumpkin Muffins
Step 1 – Preheat the oven to 350 degrees F.
Step 2 – Line a regular sized muffin tin with 12 paper muffin liners or spray the tin with nonstick cooking spray.

Step 3 – In the bowl of a stand mixer, add the spice cake mix with the pumpkin puree and mix on low speed until combined. You can use a hand mixer or a wooden spoon but it may take longer to get it well combined.

Step 4 – Portion the batter into the muffin tins just over ¾ full each.

Step 5 – Sprinkle the turbinado sugar generously over the tops of the muffins.

Step 6 – Bake for 25 – 30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

Step 7 – Remove from the oven and let cool in the pan for 5 minutes then transfer to a wire rack to cool completely.
