Instructions
Preheat the oven to 350 degrees F.
Line a baking sheet with parchment paper.
In a bowl or a stand mixer (or use a handheld mixer), mix together the granulated sugar, brown sugar, peanut butter, and jumbo egg until smooth.
Divide into 12 equal portions of cookie dough.
Use your hands to roll into balls and place on the prepared cookie sheet.
Press down with the tines of a fork one time, just enough to make an impression, on each cookie dough ball.
Bake for 12 - 14 minutes.
Cool on the cookie sheet for 2 minutes.
Transfer to a wire rack to finish cooling. Store in an airtight container.
Notes
This cookie recipe makes just 1 dozen cookies ready in about 30 minutes.
