Combine the milk with the vinegar in a small bowl and whisk together. This makes homemade buttermilk. Set it aside for 5 minutes to sour.
In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix together.
Next, whisk together the eggs and butter into the homemade buttermilk.
Pour the wet ingredients into the dry ingredients mixture and stir batter until combined and no tiny clumps remain.
If adding optional fruit, stir it in now just until combined.
Heat an electric skillet to 350 degrees F and coat it with cooking spray or cooking oil. I prefer oil for a crispier finish.
Pour 4 equal circles of batter onto the prepared pan and cook pancakes until large air bubbles appear on the surface and the bottom is golden brown, about 2-3 minutes.
Flip them over gently with a spatula and cook until the second side is golden brown. Each side should only take a few minutes. Transfer pancakes to a plate.
Add more oil if necessary and repeat to make 4 more pancakes.
Serve with your favorite pancake toppings and enjoy!
Notes
Add in your favorite fruit and top with butter, syrup, or jam if desired.
Let the melted butter cool slightly so it doesn't pre-cook the eggs when whisking into the milk.
