Thai Chicken Skewers are marinated, grilled to perfection, and topped with an amazing Thai peanut sauce! Just 8 simple steps in this skewered Thai recipe and you may have most of the ingredients already in your pantry or refrigerator.
On a cutting board, cut the chicken into small bite-sized cubes and chop the cilantro into small pieces.
Add the chicken and all the marinade ingredients to a large zipper bag or bowl. Refrigerate for 30 minutes.
At the same time soak the wooden skewers in water for 30 minutes.
Preheat a large skillet (or griddle, or grill) to medium-high heat. Spray it with non-stick spray.
Thread the chicken pieces onto the skewers.
Place in the skillet (or on a griddle or grill) and cook for 5-8 minutes on each side.
Mix the peanut sauce ingredients in a small bowl with a whisk until combined.
Serve with peanut sauce, lime wedges, and extra cilantro for garnish if desired.
Notes
If you like your chicken satay skewers to have grill marks, you can place them on a gas bbq grill over direct heat and cook for 4-5 minutes on each side.
