Ingredients
(amounts are listed in the recipe card at the bottom of the post)
boneless skinless chicken thighs
coconut milk
jarred minced garlic
dried ginger
Thai sweet chili sauce
light brown sugar
low-sodium soy sauce
cilantro
creamy peanut butter
lime juice
sesame oil
Substitutions
You can also use boneless chicken breasts, or boneless pork instead of thighs.
You can use dark soy sauce instead of low-sodium soy sauce.

How to make easy Thai Chicken Skewers
Step 1 – On a cutting board, cut the chicken into small bite-sized cubes and chop the cilantro into small pieces.
Step 2 – Add the chicken and all of the marinade ingredients to a large zipper bag. Refrigerate for 30 minutes.
Step 3 – At the same time soak the wooden skewers in water for 30 minutes.
Step 4 – Preheat a large skillet (or griddle, or grill) to medium-high heat. Spray it with non-stick spray.
Step 5 – Thread the chicken pieces onto the skewers.
Step 6 – Place in the skillet (or on a griddle or grill) and cook for 5-8 minutes on each side.
Step 7 – Mix the peanut sauce ingredients in a small bowl with a whisk until combined.
Step 8 – Serve with peanut sauce, lime wedges, and extra cilantro for garnish if desired.
Pro Tips
If you like your chicken satay skewers to have grill marks, you can place them on a gas BBQ grill over direct heat and cook for 4-5 minutes on each side.
We love to serve this over jasmine rice, wild rice, or coconut rice, and with a side of steamed broccoli for a complete meal.

- 1 ½ pounds boneless skinless chicken thighs
- ½ cup coconut milk
- 2 teaspoons Thai sweet chili sauce

- ¼ cup creamy peanut butter
- 2 teaspoons jarred minced garlic
- 1 teaspoon dried ginger
- 2 Tablespoons low-sodium soy sauce
- 1 Tablespoon light brown sugar
- 1 Tablespoon lime juice
- 1 Tablespoon sesame oil
- 2 teaspoons Thai sweet chili sauce
To assemble and serve
- 6 wooden bamboo skewers
- cilantro for garnish if desired
