Toffee Doodle Cookies are filled with toffee bits and coated in a cinnamon and sugar mixture. These incredibly delicious cookies are soft and chewy with satisfying crunchy bits. Ready in 30 minutes!
Line two baking sheets with parchment paper and set aside.
Cream the butter and the 3/4 cup sugar in bowl of a mixer until light and fluffy, about 1-2 minutes.
Add the vanilla extract and egg, mix to combine.
In another bowl mix together the flour, cream of tartar, baking soda, and salt.
Slowly add the flour mixture to the butter mixture until combined.
Reduce the speed to low and add toffee bits until just combined.
In a small bowl combine the cinnamon and 1 tablespoon sugar.
Portion cookies, about 1 tablespoon each, and roll into balls.
Coat each cookie dough ball in the cinnamon sugar mixture.
Place on the prepared sheets about 2 inches apart. Bake each batch for 10 to 12 minutes. Let cool on the pan for 2 minutes, then transfer to a wire rack to cool completely.
