Step 1 - Preheat the oven to 425 degrees F and spray a 9x9 baking dish with nonstick spray.
Step 2 - In a large bowl, combine the thawed shredded potatoes with 3 tablespoons of melted butter, salt, and pepper, blending well.
Step 3 - Add in the soup and sour cream, then the cheddar cheese, mixing everything well.
Step 4 - Spread the mixture evenly into the prepared baking dish. Optional – top with crushed potato chips or French’s Fried Onions.
Step 5 - Bake uncovered for 25 minutes.
