baby rainbow carrots
extra virgin olive oil
honey

Substitutions
You can use colorful carrots, yellow carrots, white carrots, tri-colored carrots, regular orange carrots, organic carrots, whole carrots, or fresh garden carrots.
You can also use fresh carrots instead of store-bought carrots.

How to make honey roasted rainbow carrots
Step 1 – Preheat the oven to 400 degrees F.
Step 2 – Coat a small baking sheet or oven-safe dish with cooking spray.
Step 3 – Mix the olive oil and honey in a large bowl.

Step 4 – Toss carrots in the bowl along with a little salt, and pepper, and stir to coat.

Step 5 – Lay the carrots on the baking sheet in a single layer.

Step 6 – Place in the oven and bake for 40-45 minutes or until carrots are tender and browned.
Step 7 – Remove from the oven, transfer to a serving platter, and serve immediately, sprinkled with parsley if desired.
