Monterey Chicken Casserole

Cover the chicken in plastic wrap, pound the chicken flat with a meat mallet, and place it in the bottom of a casserole dish.

Spread BBQ sauce on each chicken piece.

Layer the roasted red peppers over the BBQ sauce.

Cut the bacon into slices equal to the size of the chicken breast and lay it over the top of the casserole and bake.

Remove from oven and sprinkle cheese over the top, continue baking.

For garnish, sprinkle green onions over the top, if desired.
