- jarred minced garlic
- butter
- water
- box Spanish rice mix
- chunky salsa
- can black beans, drained and rinsed
- diced ham
- shredded Monterey Jack cheese
- Optional – crushed Doritos, cilantro, and sour cream
Substitutions
You can substitute the diced ham with cooked chicken, or cooked ground beef.

How to make Mexican Ham Casserole
Step 1 – Preheat the oven to 375 degrees F.
Step 2 – Spray a 9×13 inch casserole dish with non-stick spray and set aside.
Step 3 – Add the garlic and butter to a large skillet. Cook until the butter is melted.

Step 4 – Pour the water into the pan and add the rice mix and the salsa. Stir to combine and bring to a boil.

Step 5 – Reduce the heat to low, cover the pan, and let simmer, stirring occasionally, for 20 minutes or until rice is tender.
Step 6 – Add the diced ham and rinsed black beans. Stir together.

Step 7 – Transfer the rice mixture to the prepared casserole dish and spread the ingredients evenly in the dish.
Step 8 – Top with the Monterey Jack cheese.

Step 9 – Cover the baking dish with foil and transfer the dish to the oven.
Step 10 – Bake for 10 to 15 minutes or until the cheese is melted.

Step 11 – Serve topped with crushed Doritos and cilantro, sour cream, if desired.

- 15 ounce can black beans, drained and rinsed
